You will need:

Runner Beans (optional)

Broad Beans

Curly Lettuce

Red Pepper

Red Onion

Parsley

Extra virgin olive oil

Red wine vinegar

Whole grain mustard

Salt

Pepper

What you need to do:

Chop lettuce into quarters, wash, dry and leave to one side.

Top and tail the runner beans, cut in to bite size pieces.

Depod broad beans.

Cut and deseed red pepper in to thin strips.

Peel and chop red onion.

Toss together in a bowl.

Dressing: Pour two teaspoons of extra virgin olive oil, 2 teaspoons of red wine vinegar, 1 tablespoon

of whole grain mustard, and pinch of salt and pepper. (Measurements can be altered to desired

taste)

Whisk until emulsified, just enough to coat back of the spoon and leave to rest.

Drizzle over the salad.
